Make Him Beg Baked Eggs
Makes 2 two-egg servings
· 4 eggs
· 1/2 teaspoon salt
· 1/2 cup finely grated Gruyere cheese
· 3 tablespoons finely chopped chives
Preheat the oven to 450°F and line a baking sheet with parchment paper or a silicone baking mat.
Crack the eggs (say crack again just for fun) and separate the whites from the yolks into two bowls. Like balls, yolks need a tender touch, so if you’re worried about being too rough and breaking them, place each yolk in a separate bowl. It will make nesting the yolks in the testes much easier later.
Add your salt to your whites and use an electric mixer to beat it off. Start slow and turn up the intensity until the mixture is nice and stiff. If you need to build up your arm muscles, you can do it by hand with a whisk
Gently fold in the grated cheese, being careful not to let the mixture get too soft. Once combined, use a spoon to conCOCKt the perfect peen shape with the mixture on the baking sheet. Make a little indent in each ball to hold the egg yolks in a few minutes.
Slide your egg white peens in (to the oven, that is). As with any pull-out, timing is everything, so after 3 minutes, pull those peens out of the oven and quickly add a yolk to each teste-nesty indent. Return the peens to the oven and bake for another 3 minutes, top with chives and serve immediately!
